Vegetarian Caldo Verde Recipe (Kale Soup)

Serves 6
Olive oil
1 large onion, diced
4 cloves garlic, minced
3 Extra large Yukon gold potatoes, or 5 smaller ones, cut into 1/2 inch cubes
5 1/2 or morecups flavorful broth or water (add a bit more if you like a brothier soup)
2 bay leaves
1 bunch collard greens, stem removed and leaves cut into thin ribbons
4 - 5 small tomatoes, cut into quarters
Salt

Warm a tablespoon or two of oil in a large soup pot. Add onion and cook until soft, then add garlic and cook for one minute. Do not let the garlic brown. 

Add potatoes and broth/water, along with the bay leaves. Bring the mixture to a boil. Reduce heat to a simmer. Cover the pot and cook until potatoes are very tender, about 20 or so minutes. 

Remove bay leaves and discard. Ladle 2 or 3 cups of potato cubes from the pot, into a heat-proof bowl. 

Blend the soup remaining in the pot with an immersion blender until the broth is smooth and creamy with rough chunks of potato here and there. You can use a food processor instead of the immersion blender, but do not over process. 

Add potato cubes back into the pot. Bring soup back to a gentle simmer and add the greens and tomatoes, plus 1/2 teaspoon salt or more (depending on whether you are using water, or the saltiness of your broth). 

Taste the soup to decide how much salt to add. Cook until greens are wilted and tomatoes are barely soft, about 2 - 4 minutes.

Currently...


I feel like I have really been taking advantage of my days off lately and knocking items off my personal to-do list. It's Friday and I have the day off so I headed over to Panera Bread for lunch and to get some work done for my blog and shop.

Making: I am still currently adding items to my shop of some of the new necklaces that I created recently. They are all wood cut necklaces and really adorable. You can see more of those here. I have been growing some plants in my patio for now, which I plan on later planting in the back yard. I also decorated a wall in our bed room with some DIY and I think it came out really cute! The middle frame is a mirror so it is reflecting the wall behind.




Anticipating: My birthday! It's about 2 weeks away. Surprisingly, no matter how old I get I always look forward to my birthdays!

  
Learning: Lately, I have been doing much research on how to improve your experience while reading my little piece of the internet. I love blogging and I want all my lovely readers to be able to take something away from my writing and photography. I have also been trying to learn how to be more patient with others. Sometimes I forget that everyone learns at a different pace and that patience is a virtue not many people have.


Listening to: The Lunmineers some of their songs really lift my spirits! And the Shins.

Wearing: I had shorts on earlier but I think I am going to have to put on some skinny jeans when I go to Chilis tonight for a drink with my lovely friend Kaiti. You can find this necklace here! Yes! Sometimes I keep a piece for myself! 




Feeling: Honestly I feel really great lately. I have been eating very healthy for the past week and it shows in the way my clothes fit and what the scale says. Being comfortable in my own skin always makes me feel happy and sexy and I think that that is so important. There are also a few things like renewing our lease and Chris being able to walk again after his motorcycle accident that have really taken a huge weight off my shoulders. So life is good all around right now! 

Watching: I have been watching several things lately! Stand Up Guys, Savages, Copper and of course the X-Files again...
